This past Saturday, Orbis hosted its first Monthly Dinner since taking a hiatus for the summer. Global dishes made with local produce was the theme, a favorite among all of us who get to work here.
The night began with a refreshing Blackberry Gin Fizz, a cocktail of blended blackberries and sugar, Bluecoat Gin, thai basil and soda. The three appetizers served struck a perfect balance. Carrot wedges roasted like fries were dipped in a creamy, spicy harissa pepper sauce. Fat summer rolls of chicken and fresh veggies were accompanied by a light dressing of fish sauce, lime, and cane sugar. Chilled romaine lettuce cups held sweet watermelon poke with scallions and cilantro.
Main courses started with a tomato and sherry vinegar gazpacho with lemon, orange, and diced jalapenos. A rich yet light ratatouille of eggplant, tomato, and pepper was soaked up with a crunchy baguette. A home- (Holly)made pappardelle pasta with pesto and fresh ricotta was a HIT with all present!
Then came the meat! The soft taco with a black mole steak, cabbage, and pickled red onion was one of the tastiest tacos I’ve ever had. The final dinner course was another crowd favorite. Soy, hoisin, honey, and a Chinese 5-spice mix of clove, star anise, peppercorn, cinnamon, and fennel made up the Char Siu that marinated the pork. It came with sweet pickled plums on top of fresh corn grits.
And last but not least, dessert! A peach and pistachio semifreddo, like a frozen mousse, along with honeyed peaches and a pistachio tuile, was a consummate end to the evening.
